Description

A delicious and comforting casserole featuring layers of ground beef, zucchini, and tater tots topped with melted mozzarella cheese.


Ingredients

  • 1 lb Ground beef
  • 1 bag Tater tots
  • 2 Zucchini (sliced)
  • 2 cups Shredded mozzarella cheese
  • 1 Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 can Cream of mushroom soup (or heavy cream)
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a medium casserole dish.
  2. In a skillet, sauté onion and garlic in olive oil until fragrant, then add ground beef and cook until browned. Drain excess fat.
  3. Stir in cream of mushroom soup (or cream) and season with salt and pepper. Spread the mixture evenly in the casserole dish.
  4. Layer thinly sliced zucchini over the beef mixture.
  5. Sprinkle shredded mozzarella over the zucchini layer.
  6. Arrange tater tots on top, covering the surface completely.
  7. Bake uncovered for 30–35 minutes, until tater tots are golden brown and the cheese is bubbling. Garnish with parsley before serving.

  • For a healthier option, you can substitute ground beef with ground turkey or chicken.
  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
