A delicious and comforting casserole featuring layers of ground beef, zucchini, and tater tots topped with melted mozzarella cheese.

- 1 lb Ground beef
- 1 bag Tater tots
- 2 Zucchini (sliced)
- 2 cups Shredded mozzarella cheese
- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 1 can Cream of mushroom soup (or heavy cream)
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a medium casserole dish.
- In a skillet, sauté onion and garlic in olive oil until fragrant, then add ground beef and cook until browned. Drain excess fat.
- Stir in cream of mushroom soup (or cream) and season with salt and pepper. Spread the mixture evenly in the casserole dish.
- Layer thinly sliced zucchini over the beef mixture.
- Sprinkle shredded mozzarella over the zucchini layer.
- Arrange tater tots on top, covering the surface completely.
- Bake uncovered for 30–35 minutes, until tater tots are golden brown and the cheese is bubbling. Garnish with parsley before serving.
Notes
- For a healthier option, you can substitute ground beef with ground turkey or chicken.
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
