Ingredients

  • 2 cups shredded potatoes
  • 1 cup mozzarella (or melty cheese of choice)
  • 2 eggs
  • 1/2 cup Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Mix shredded potatoes with eggs, Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Press mixture into muffin cups, leaving a well in the center.
  4. Bake for 15 minutes until lightly crisp.
  5. Add a cube or handful of mozzarella into the center of each potato cup.
  6. Return to oven for 8–10 minutes until golden and cheese is melted.
  7. Garnish with parsley and serve warm with gooey cheese flowing.
