Ingredients

- 2 cups shredded potatoes
- 1 cup mozzarella (or melty cheese of choice)
- 2 eggs
- 1/2 cup Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Mix shredded potatoes with eggs, Parmesan, garlic powder, onion powder, salt, and pepper.
- Press mixture into muffin cups, leaving a well in the center.
- Bake for 15 minutes until lightly crisp.
- Add a cube or handful of mozzarella into the center of each potato cup.
- Return to oven for 8–10 minutes until golden and cheese is melted.
- Garnish with parsley and serve warm with gooey cheese flowing.
Notes
- Ensure potatoes are well-drained to avoid sogginess.
- Feel free to experiment with different types of cheese.
