Description

Delicious bite-sized Greek yogurt treats with a hint of blueberry compote, perfect for a healthy snack.


Ingredients

Scale
  • 1½ cups (370g) plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¾ cup (100g) fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Combine blueberries, lemon juice, and optional honey in a small saucepan over medium heat and cook for 5–6 minutes.
  2. Mix together Greek yogurt, vanilla extract, and honey in a medium bowl until smooth and creamy.
  3. Spoon about 1 tablespoon of yogurt mixture into each cavity of a silicone mini muffin tray.
  4. Add ½ teaspoon of cooled blueberry compote onto each yogurt portion and swirl with a toothpick.
  5. Freeze for at least 2 hours until firm.
  6. Remove from molds and thaw slightly before serving.
