Delicious bite-sized Greek yogurt treats with a hint of blueberry compote, perfect for a healthy snack.
Ingredients

- 1½ cups (370g) plain Greek yogurt
- 1 tablespoon honey or maple syrup
- ½ teaspoon vanilla extract
- ¾ cup (100g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional)
- 1 teaspoon chia seeds (optional)
Instructions
- Combine blueberries, lemon juice, and optional honey in a small saucepan over medium heat and cook for 5–6 minutes.
- Mix together Greek yogurt, vanilla extract, and honey in a medium bowl until smooth and creamy.
- Spoon about 1 tablespoon of yogurt mixture into each cavity of a silicone mini muffin tray.
- Add ½ teaspoon of cooled blueberry compote onto each yogurt portion and swirl with a toothpick.
- Freeze for at least 2 hours until firm.
- Remove from molds and thaw slightly before serving.
